Prep this to go in the morning and you will have a delectable and hearty salad for your on-the-go lunch. This Mediterranean inspired lunch will satisfy.

Mediterranean Fig Salad

Makes 2 servings

Salad Ingredients

  • 4 cups arugula
  • 4 figs
  • ¼ cup red onion, chopped
  • 4 Kalamata olives, pitted and halved
  • ¼ cup feta cheese


  • 6 Tbsp extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 1 tsp garlic minced


  1. Whisk together the dressing ingredients and set aside
  2. Split the salad ingredients between two plates and drizzle each with the dressing and enjoy
