Black Bean & Potato Pie

Ingredients

  • 2 whole eggs
  • 1 cup vegetable broth
  • ½ TSP chili powder
  • 1 TBS turmeric powder
  • Salt and pepper
  • ½ cup lentil flour
  • 1 cup black beans, cooked
  • 4 cups potatoes, diced
  • 1 cup spinach, chopped
  • 2 TBS of virgin coconut oil

Directions

  1. Heat up the oven at 400F.
  2. In a bowl, whisk the eggs, broth, spices and flour.
  3. Place all the chopped vegetable and beans in a pie pan. Pour liquid mix over vegetables, and then add the coconut oil on top of the vegetable.
  4. Place the pan into the oven for 45 minutes.
  5. Serve warm.
