Avocado and Goat Cheese Soufflé

25 minutes, 2 servings, 306 calories per serving, Vegetarian, gluten-free


  • 3 whole eggs
  • 1 ripe avocado
  • 3 tbs of soft goat cheese
  • Sea salt and pepper
  • Paprika powder


  1. Preheat oven to 400°F.
  2. Beat the eggs in a bowl with the spices.
  3. Mash the goat cheese with the avocado.
  4. Grease an oven safe bowl, pour some egg mix in it and place a heaping tablespoon of the avocado mix in the middle.
  5. Bake for 20 minutes.
